I love finding ways to incorporate more veggies into our meals, but I have to admit, spinach and kale are not on the kids’ favorite list, however bacon is! So I took some spinach and kale and sauteed it with onions. That combination alone tasted scrumptious, but I wanted to make it into a dip so I added some cheeses, garlic and hot sauce. Once it was baked in the oven, the flavors melded together perfectly and the kid’s loved it. This Hot Spinach, Kale & Bacon Dip came together quickly, and is a great way to sneak in those veggies!
Hot Spinach & Kale Dip

Ingredients
- 1 small onion, diced
- 1 1/2 C chopped kale
- 2 C chopped spinach
- 1 Tbsp. minced garlic
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 4 ounces cream cheese, softened
- 1/4 C sour cream or plain greek yogurt
- 2 Tbsp. real bacon bits
- 1/4 C shredded Parmesan cheese + 1 Tbsp.
- 1 Tbsp. milk
Instructions
- Preheat oven to 350 degrees; grease two 4 inch ramekins.
- Saute' the onions until translucent, then add in the garlic, spinach and kale.
- Cook for about 5-8 minutes until it wilts down.
- Mix in the cream cheese, sour cream, real bacon bits, Parmesan cheese, salt, pepper and milk.
- Stir and then place half into one ramekin. With the other half add in a few dashes of hot sauce; place into ramekin.
- Sprinkle on a little more Parmesan cheese, place a few drops of hot sauce on top of the one so you know which one it is while baking.
- Place in the oven and bake for 15-20 minutes; until golden brown on top.
- Serve and enjoy!
