Hot Spinach, Kale & Bacon Dip

Hot Spinach, Kale & Bacon Dip is simple, nutritious and delicious!
 
 

I love finding ways to incorporate more veggies into our meals, but I have to admit, spinach and kale are not on the kids’ favorite list, however bacon is!  So I took some spinach and kale and sauteed it with onions.  That combination alone tasted scrumptious, but I wanted to make it into a dip so I added some cheeses, garlic and hot sauce.  Once it was baked in the oven, the flavors melded together perfectly and the kid’s loved it. This Hot Spinach, Kale & Bacon Dip came together quickly, and is a great way to sneak in those veggies!

 

Hot Spinach & Kale Dip

Ingredients
  1. 1 small onion, diced
  2. 1 1/2 C chopped kale
  3. 2 C chopped spinach
  4. 1 Tbsp. minced garlic
  5. 1/4 tsp. salt
  6. 1/4 tsp. pepper
  7. 4 ounces cream cheese, softened
  8. 1/4 C sour cream or plain greek yogurt
  9. 2 Tbsp. real bacon bits
  10. 1/4 C shredded Parmesan cheese + 1 Tbsp.
  11. 1 Tbsp. milk
Instructions
  1. Preheat oven to 350 degrees; grease two 4 inch ramekins.
  2. Saute' the onions until translucent, then add in the garlic, spinach and kale.
  3. Cook for about 5-8 minutes until it wilts down.
  4. Mix in the cream cheese, sour cream, real bacon bits, Parmesan cheese, salt, pepper and milk.
  5. Stir and then place half into one ramekin. With the other half add in a few dashes of hot sauce; place into ramekin.
  6. Sprinkle on a little more Parmesan cheese, place a few drops of hot sauce on top of the one so you know which one it is while baking.
  7. Place in the oven and bake for 15-20 minutes; until golden brown on top.
  8. Serve and enjoy!
