  • Softened butter 225g (1 cup)
  • Eggs 4
  • Milk 1 - 2 tablespoons
  • Vanilla extract 2 teaspoons

  • In the start you need to preheat the oven to 180 degrees C or 350 F. at the same time, you’ll need to grease an 8 inch pan.
  • Then sift the flour and baking powder in a bowl. Set it aside.
  • In another bowl, you need to cream the butter and sugar.
  • Add eggs to the mixture.
  • Add vanilla and milk and batter it until it becomes smooth.
  • Now pour it in the pan.
  • The baking should be done for about 20 minutes. The cake should be left in the pan to cool for 10 minutes and then turned out in a wire rack so that it cools completely.
  • Serve the cake.
  • Traditionally, the cake is served unfrosted, in two halves and filled with either custard or jam.
  • The last step is to dust it with sugar.

    This looks delicious. Would you use vanilla pudding and strawberry jam for the center filling?

    What are the directions for making it in the food processor? Would you cream the ingredients in the processor instead of a bowl, then keep adding ingredients until it was all incorporated? It looks delicious! Can’t wait to try it :)

    In a traditional Victoria Sponge, the filling would either be a buttercream or heavy whipping cream beat to stiff peaks. My husband is from England and I make this for him at least a couple times a month. :) I always use the heavy whipping cream for his.
