Chicken Spiedini is an amazing and filling, yet still, light main dinner dish that can be put together with just a few ingredients, and is also wonderful for the fact that it costs about $10 to make a meal for four people! One of the many great parts about this dish is that a lot of the ingredients are ones that you already likely have on hand! Plus, the meat cooks on skewers so there are a few ways to dish it up!
 
For this recipe, you’ll need:

  • 4 boneless chicken breasts cubed
  • 1/2 cup bread crumbs
  • 1/2 cup parmesan cheese
  • 16 oz. Angel hair pasta

And for the Meat Marinade:

  • 1/2 cup vegetable oil
  • 1/4 cup dry white wine
  • 1/2 cup lemon juice
  • 5 cloves garlic
  • 2 T. kosher salt

Last, but not least, the Amogio Sauce to top it off:

  • 1/2 cup olive oil
  • 1/4 cup dry white wine
  • 1/4 cup lemon juice
  • 1-1/2 cloves garlic
  • 1 T. kosher salt
  • pinch red pepper flakes
  • 1/8 cup finely chopped fresh basil

Start off by making your Meat Marinade. It’s easiest to prepare the marinade in a measuring cup, that way you can add the ingredients required as you go.

Cut your chicken into 1 inch cubes. **Tip: Have your butcher cut your chicken for you when you order the meat at the grocery store. That way he/she can also clean up the meat by trimming off the excess fat and, you’re ready to rock ‘n roll! Find a dish that will fit your skewers horizontally so the meat can touch the bottom of the dish to marinate in overnight. String your chicken onto the skewers.

Pour Meat Marinade over chicken and place covered in refrigerator.

Set in dish overnight, turning the skewers in the morning, if they are not completely covered by the marinade.
 
Prepare your Amogio Sauce, and let sit overnight at room temperature.

** Tip: Since you won’t use all of your fresh basil for this recipe, finely chop all of the basil, and place any leftovers in a freezer sealed bag and label with name of herb and date. This way, you have fresh finely chopped basil to use within 90 days for your next recipe. You may drizzle the basil in the bag with olive oil to keep it from drying out if you wish.

Next Day:

Combine bread crumbs and parmesan cheese on a plate. Remove skewers from Meat Marinade and roll skewered chicken in bread crumb mixture.

Place on a dish or plate and let sit for 1 hour.

While cooking pasta according to directions on package, boil the Amogio Sauce for about 5 minutes. Grill chicken skewers until done, or lay the chicken skewers on a baking sheet covered with foil or parchment paper and bake in the oven at 475 degrees for about 15 minutes or until no longer pink.

Lay cooked pasta on plate or dish, remove chicken from skewers and place on pasta. Drizzle warmed Amogio Sauce over chicken and pasta.
