Grilled Pork, Veggie & Cheese Quesadillas (Chopped at Home Challenge)

I am so excited because Sargento® Cheese (available in 30 versatile varieties, unique blends and distinct cuts, Sargento Shredded Cheese is always cut from blocks of 100% real, natural cheese) asked me to participate in the Chopped at Home Challenge using “basket” ingredients of grape tomatoes, broccoli, pork tenderloin, and Sargento 4 State Cheddar Cheese; the theme was grilling.  Chopped is one of my favorite shows so I couldn’t wait to participate!  I decided to make Grilled Pork, Veggie & Cheese Quesadillas.  My family loves quesadillas and I’ve never made them on the grill before so this was the perfect time to try it.  

I decided to cut the tenderloin into slices so it would cook faster on the grill and seasoned it with onion powder, garlic powder and paprika.  I then placed the grape tomatoes on the top so they wouldn’t burn.  Then I brushed a little olive oil onto the broccoli, sprinkled on some salt and placed that on the top shelf as well.  I added on an onion and couldn’t wait to get all that smokey flavor into the veggies.

Once everything was cooked I chopped up the pork and veggies into bite size pieces.  Now all I had to do was make an assembly line and go!  I took a corn tortilla and sprinkled on some cheese, pork, broccoli, grape tomatoes, onion, and then a little bit more of the cheese.  Make sure there is cheese on the bottom and top so it melts onto the tortillas and holds everything together. 

Place another tortilla on top and carefully place it onto the grill.  Let it cook a few minutes and then using a spatula, flip it over and cook for a few more.  Make sure the cheese has melted!  Remove the quesadillas from the grill, slice into pieces and serve with your favorite toppings.

We served ours with sour cream, salsa and salsa verde.  All six of us agreed that these will be on the menu rotation from now on!  They were simple to make and it’s an easy way to get all the food groups into one dish.
