Do you eat enough leafy greens? I know I don’t and that’s one of the reasons why I wanted to review and taste the recipes in this book. I didn’t grow up eating Kale, Chard, Bok Choy, Watercress, Endive, or Mustard Greens. But that’s no reason to ignore them, right? I find that as I get older, I really have the desire to find different ways of preparing fresh produce. Not only is it healthier for us, but I’m sick of the same ol’ vegetables that my family is willing to eat. I need to change it up a little! At this point, I’m willing to make it just for me, if Dave doesn’t want to try something new. (Andrew is hardly home at supper time and Matthew lives an hour away in Boston.)
So…being the Brussel Sprouts freak that I am, I made the Brussel Sprouts with Bacon and Cherries on page 39 of this cookbook. They. Were. Yummy! I used dried cranberries instead of the dried cherries and I enjoyed every bite! Wahoo! Now I have a different way to make my favorite vegetable!

Review: The Leafy Greens Cookbook does not have any photos, but the recipes are mostly short and look very easy to make. This is one healthy cookbook! It’s filled with wholesome, feel-good food! I would describe the recipes as creative, unique, and vitamin-packed. I personally feel like this book will open me up to enjoying new ways of preparing fresh, seasonal produce!

I love greens since I grew up eating all kinds because my parents always had a large garden in the summertime with all kinds of vegetables growing in it. I still eat my greens and still enjoy them as much as I did when I was a youngster. But the chance to win this book would mean I would get more ideas to enjoy my greens ever so much more..

We eat rapini and spinach, and I try and do bok choy once a month, but there are so many other great greens to incorporate into the menu. I’d love to win the book and try the recipes out.
