 My Review

The main goal of this cookbook is calorie awareness.  In the beginning of the book, the authors go into great detail about calories, metabolism, and controlling body weight.

Each recipe includes CALORIES IN (nutrition facts), CALORIES OUT (how long you need to walk at a brisk pace or jog to burn off the calories for this recipe), CALORIE COMBOS (possible food items or recipes that could go with the recipe) and CALORIE CUTS (ideas on how to reduce the calories and fat in the recipe.)  With this information, you can make better choices when you see how the calories can add up.

This Calories IN Calories OUT info goes with the Chicken-Zucchini Burgers with Ricotta and Sun-Dried Tomatoes recipe (below).

The recipes in this cookbook are divided into the following sections:

  • 0 to 199 calories per serving
  • 200 to 299
  • 300 to 399

It has a great chart in the back that gives you the nutrition facts for common foods we eat every day as well as food you might buy at a restaurant. 

I really love the concept of this cookbook!  I can’t wait to try more recipes for me and my family!

 

So, what did I make so far?

 

The first recipe I made from the book is Roasted Chicken with Rosemary-Lemon-Garlic Rub which is 244 calories per serving.

 I spread the rub mixture over and under the skin.

 It was tender and flavorful!

 

The next thing I made is Chicken-Zucchini Burgers with Ricotta and Sun-Dried Tomatoes

 It is 261 calories for 1 large, delicious burger.

The sun-dried tomatoes really give it an Italian taste!

Chicken -Zucchini Burgers with Ricotta and Sun-Dried Tomatoes
Serves 4

Ingredients
  1. 1 lb. ground chicken
  2. 1/2 cup grated zucchini (use the large holes of a box grater)
  3. 1/3 cup part-skim ricotta cheese
  4. 1 teaspoon minced garlic
  5. 1 teaspoon Dijon mustard
  6. 1 teaspoon Worcestershire sauce
  7. 2 tablespoons chopped fresh basil, flat-leaf parsley, or cilantro
  8. 3 tablespoons thinly sliced scallions
  9. 3 tablespoons chopped sun-dried tomatoes in oil, drained
  10. 1/2 teaspoon salt, or to taste
  11. Freshly ground pepper, to taste
  12. 1/4 cup panko bread crumbs, plus about 1/2 cup for breading the burgers
  13. 1 tablespoon vegetable oil
Instructions
  1. In a large bowl, combine all of the ingredients except the bread crumbs for breading the burgers and the vegetable oil. Mix until well blended.
  2. Divide the chicken mixture into 4 portions. Form each portion into a patty, then coat with the remaining 1/2 cup of bread crumbs. Place the finished patties on a large plate and refrigerate, covered, for at least 30 minutes, and up to 6 hours.
  3. When ready to cook, heat the vegetable oil in a large nonstick skillet over medium heat. Add the burgers and cook for 6 minutes, or until the underside is golden. Flip the burgers and cook for 4 to 5 minutes, until they are completely cooked through. Remove from skillet and serve hot.

    I am all about counting everything now a days lol.

    I’m a regular visitor to your blog, I’m subscribed and I love it, but I don’t post normally. That chicken looks delicious and if the other recipes are like that, then I definately want that book! I’ve also been counting calories and trying to lose some weight. I’m down 7.2 lbs. Yay!!

    I love that it shows how much exercise you need to do to burn off the calories. It would be useful when considering things to eat that are not in this cookbook as well. And, the photo and recipes look delicious. Will definitely be sharing on facebook and pinterest.

    To take guesswork out of counting calories and have such delicious recipes all made out yes, it would be an honor to win this cookbook. I think I would stick to a diet if my calories and recipes were counted for me like in this cookbook. Hope I can win, would love to have it!!

    I sometimes think we focus too much on calories and not on serving size. If we don’t overeat and we do normal exercise, such as walking, vacuuming, etc we can maintain or lose weight.
