Hawaiian Beef Burgers
This was inspired by one of my favorite burgers growing up at Red Robin.
Ingredients
- 1 lb. ground beef, reduced fat
- 1 cup chopped pineapple
- 1/4 cup sliced green onion
- 1/4 cup sweet chili sauce
- 1/4 cup soy sauce, light
- 1 tablespoon mayonnaise, low fat
- 8 sliced tomatoes
- 4 lettuce leaves
- 4 slices cheddar cheese, low fat
- 4 whole wheat hamburger rolls
Directions
- Form the beef in to patties and either grill, broil, or pan-fry until cooked through.
- Meanwhile cook the pineapple, onion, chili sauce, and soy sauce in a pan over medium heat for 5 minutes.
- Top the burger with the pineapple mixture and top that with cheese.
- Spread the buns with mayo (feel free to toast the buns) and top with lettuce and tomato.
- Put the sandwich together and enjoy.
per serving: 442.5 calories; 40.05 gram protein; 9.6 grams total fat; 4 gram fiber;
6 gram saturated fat; 42.55 grams carbohydrates; 76 mgs cholesterol; 1159.5 mgs sodium
Firecracker Shrimp Salad
This recipe calls for Turkey Bacon, might be a good time to splurge for regular bacon if you like it, or of course omit it if you don’t like.
Ingredients
- 1/4 cup Extra Virgin Olive Oil
- 8 slices Turkey Bacon
- 1 1/2 pound raw Shrimp
- 8 cups Spinach
- 1/4 cup Red Wine Vinegar
- 2 sliced Tomatoes
- 1 tablespoon Sugar
- 1 tablespoon Dijon Mustard
Directions
- Chop the bacon and cook in the oil in a skillet over medium heat until crisp, scoop the bacon out, and drain on a paper towel.
- Cook the shrimp in the skillet with the pepper flakes and seasoning until the shrimp turn pink and place them on the paper towel with the bacon.
- Turn the heat off and put the remaining ingredients in a large mixing bowl.
- Add the vinegar, sugar, and mustard to oil left in the skillet and whisk, add to the salad and mix. Plate it to look pretty, and enjoy.
per serving: 494 calories; 52.5 gram protein; 22 grams total fat; 10.5 gram fiber; 4 gram saturated fat; 30.5 grams carbohydrates; 288 mgs cholesterol; 1000 mgs sodium
