Spicy Grilled Salmon
I’m the only one in my house that likes salmon so when I find myself alone at dinner time, I treat myself to piece of salmon. Jenny’s recipe is so easy and delicious! The ingredients can be found in everyone’s pantry and the fish is perfectly done in 10 minutes!
Chili and Cornbread Bake
Dave loved this dish! He was happy to have the leftovers the next day! I don’t love black beans as much as him, but I did enjoy this dish with a nice dollop of sour cream on the side.

I love freezing baked spaghetti!!!! But I would love to know how to freeze mashed potatoes…they always are so watery.

I like to freeze trays of chicken enchiladas. They cook up great and it’s handy to prepare them ahead of time. I also freeze big batches of soups in one quart containers.

We love Mexican Lasagna - so easy to freeze and eat when we need a quick meal!
We often make extra chili so that we can freeze portions for other meals during the week. I would love to make some meat pies like my mother used to make, eat one, freeze one for later. We always enjoyed that.

I typically don’t freeze meals, because I always think they’re going to taste terrible, but these look amazing! This would make my life a lot easier when I’m thinking about packing lunches…I ordinarily end up with packaged frozen meals when I don’t have leftovers.

I love to make stuffed shells and stuffed peppers to freeze. The recipes usually call for more than our family will eat and I can put it in a casserole dish to reheat later. They taste just as good later! :)

We freeze twice baked potatoes. They are always handy to have around in emergencies. We also keep frozen pizza dough. Good to make extra so it is ready in a pinch.

I have one of Jenny’s first cookbooks and I LOVE making her pot stickers. They are a HUGE hit whenever I do. I also love to freeze banana bread, muffins and cookie dough. Can you tell I love sweets?!
