Easy Fried Chicken

My family loves fried chicken, and honestly so do I.  I love the crispy coating on the outside which is made with a simple seasoned flour, and the tender chicken inside is so moist from the buttermilk.  There’s honestly no special ingredients here; I’ve watched a ton of Food Network shows, and they all have a basic batter which yields a moist and delicious fried chicken.  After lots of trials and errors, we have settled onto this recipe.  You’ll have the ingredients in your pantry so you can make this for dinner tonight.  I hope you enjoy this as much as our family does!

Ingredients
  1. 4 pounds chicken, cut into pieces
  2. 1 cup buttermilk
  3. 2 cups all-purpose flour for coating
  4. 1 teaspoon paprika
  5. 1 teaspoon onion powder
  6. 1 teaspoon garlic powder
  7. salt
  8. pepper
  9. oil for frying
Instructions
  1. Put the flour in a large plastic bag
  2. Season the flour with paprika, onion powder, garlic powder, salt and pepper
  3. Dip chicken pieces in buttermilk then, a few at a time, put them in the bag with the flour
  4. Seal the bag and shake to coat well.
  5. Place the coated chicken on a cookie sheet, and cover with a clean dish towel or waxed paper. Let it sit until the flour is like paste -- DO NOT skip this step!
  6. Fill a large cast iron skillet about 1/2 full with oil; heat until VERY hot.
  7. Put in as many chicken pieces as the skillet can hold.
  8. Brown the chicken in the oil on both sides.
  9. When browned, reduce heat and cover skillet; let cook for 30 minutes (the chicken will be cooked through but not crispy).
  10. Remove cover, raise heat again and continue to fry until crispy.
  11. Drain the fried chicken on paper towels.
  12. Keep the finished chicken in a slightly warm oven while preparing the rest.
Notes
  1. You can coat this in hot sauce once you're done frying for a deeper flavor!
