Creamy Hashbrown Casserole

My grandmother makes the best hashbrown casserole and I’ve tried to make it like hers, but it never seemed to taste quite the same.  So it surprised me when she said she uses margarine rather than butter.  I’ve always used butter, but once I started making it with margarine I couldn’t believe the difference and now that’s how I make it every time.  I like to serve this casserole with some type of protein, and On-Cor Gravy & 6 Salisbury Steaks are the perfect accompaniment.  They’re hearty and satisfying, and served with a savory, rich brown gravy.  Add on a veggie and dinner is good to go!

I love that I can prepare this recipe when the oven is preheating and then toss it, along with the On-Cor Gravy & Salisbury Steaks, into the oven and in about an hour I have dinner done.  The frozen, fully-cooked entrées are conveniently packaged so all I have to do is heat and serve.  It makes dinner so much easier and we all know that life is demanding enough; dinner shouldn’t be.  So On-Cor does the prep work, so I can take care of other to-do’s that need to-doing, and with a family of six, it’s a lot!

Creamy Hashbrown Casserole Recipe

Ingredients

  • 1 (2 pound) bag frozen hashbrowns, thawed
  • 1/2 C margarine, melted
  • 1 tsp. onion powder
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 (8 ounce) container sour cream
  • 2 cups shredded Colby Jack cheese plus 1/2C for the top.

Instructions

  1. Preheat oven to 350 degrees F; spray a 3 quart casserole dish with non-stick cooking spray.
  2. In a large bowl, mix the melted margarine, onion powder, cream of chicken soup, and sour cream together.
  3. Stir in the hashbrowns and mix until combined.
  4. Fold in the cheese.
  5. Place into prepared casserole dish; cover with foil.
  6. Bake in preheated oven for 45 minutes.
  7. Remove foil, sprinkle on some extra cheese and place back in the oven for 5 minutes.
  8. Remove from oven and allow to sit an additional 5 minutes.
  9. Serve and enjoy!
