Coconut Pineapple Chicken Skewers

Summer is almost here and I love cooking out on the grill;  these Coconut Pineapple Skewers are perfect for any sunny day!  I love that you can prep everything ahead of time, let the chicken marinate, and then when you’re ready to eat all you have to do is toss it on the grill and you’re good to go.  The combination of pineapple and coconut go so well with the chicken.  It’s tender, juicy and delicious!

Coconut Pineapple Chicken Skewers

Ingredients
  1. 1 bottle Coconut Pineapple Sparkling Ice
  2. ½ cup olive oil + extra to brush pineapple
  3. 2 teaspoons harissa paste or other spicy chili sauce (like Siracha)
  4. ½ teaspoon salt
  5. 1 ¼ - 1 ½ lbs. chicken tenders
  6. 1 fresh pineapple – peeled, cut into 1½" chunks
  7. 2 cups cooked rice
  8. Toasted coconut for garnish, optional
  9. Cilantro for garnish, optional
Instructions
  1. In large shallow baking dish combine Coconut Pineapple Sparkling Ice, olive oil, harissa, salt and stir to combine. Reserve 1/3 cup marinade for basting
  2. Add chicken tenders, turning to coat. Cover and let marinate in refrigerator for 2 hours
  3. Meanwhile, soak 16 wooden skewers in water
  4. String marinated chicken on 8 wooden skewers
  5. String pineapple on remaining skewers and brush with olive oil
  6. Heat grill to medium high
  7. Grill chicken and pineapple on two separate parts of grill. Grill chicken for 4 – 6 minutes per side (depending on thickness and heat)
  8. Remove to platter and baste with reserved marinade
  9. Grill pineapple until slightly caramelized
  10. Serve with cooked rice
  11. Garnish with cilantro and toasted coconut if desired
Notes
  1. You'll need 16 Wooden skewers for these!
