 Cinnamon Apple Muffin Recipe by Crunchies Natural Food Company
 
 

The holidays are among us which means there will be a lot of friends and family coming to visit.  I love having treats that are made ahead of time this way I’m not confined to the kitchen.  I love to sit down, have a cup of coffee and enjoy spending time together.  These Cinnamon Apple Muffins are perfect to make ahead of time, freeze and then thaw when you’re ready to serve.  I used Crunchies freeze-dried snacks for a twist and it worked out perfectly.

Muffins
  1. 1 cup all-purpose flour
  2. 1/2 cup whole wheat flour
  3. 1/2 cup granulated white sugar
  4. 1/2 cup brown sugar
  5. 1/2 tsp salt
  6. 2 tsp baking powder
  7. 2 tsp ground cinnamon
  8. 1/3 cup vegetable or canola oil
  9. 1 large egg
  10. 1/3 cup milk
  11. 1 bag Crunchies Cinnamon Apple (or 2 medium apples, peeled, cored and chopped)
Topping
  1. 1/4 cup granulated white sugar
  2. 2 tbsp all-purpose flour
  3. 2 tbsp butter, softened
  4. 1 tsp ground cinnamon
Instructions
  1. Preheat oven to 400°F. Grease a 12-cup muffin tin or line with paper muffin liners.
  2. In a medium bowl, whisk together dry ingredients.
  3. Add oil, egg and milk and stir just until combined.
  4. Fold in apples. Divide batter between the 12 muffin cups.
  5. In a small bowl, mix topping ingredients, blending together with a pastry cutter or fork. Sprinkle over unbaked muffins.
  6. Bake 15 to 20 minutes, or until a toothpick inserted in center of muffin comes out clean.

    I would put the fruit through a coffee grinder to make into a powder which would be folded into macaron batter to give them flavor.
