As a food blogger, I’m participating in the Cans Get You Cooking program – a program dedicated to educating people about the benefits of cooking with canned foods. From now until the month of December, I will be sharing recipes I love using canned ingredients from my own “Cantry.”
I have always enjoyed chicken salad sandwiches, but last year a friend of mine suggested that I make it with canned chicken. Once I tried it, I was hooked because [A] it’s less work to throw together, [B] I love the flavor and shredded texture and [c] it’s convenient and fresh. Now, I always keep canned chicken on hand for a quick, fresh sandwich!
One 10 ounce can makes 2 sandwiches.
The chicken is packed in lots of water, so even after you drain it, it’s nice and moist.
I like to add chopped walnuts and dried cranberries. It gives it a little crunch and a touch of sweetness.
A little mayonnaise and you’re good to go!
I personally like it on whole wheat low-cal bread.

Canned Chicken Salad Sandwiches
Ingredients
- 10 oz. can chicken breast (drained)
- 2 to 3 tablespoons chopped walnuts
- 2 to 3 tablespoons dried cranberries
- 3 tablespoons mayonnaise
Directions
- Mix all of the ingredients together in a medium bowl. I think it tastes best if refrigerated for at least an hour.
- Place desired amount of chicken salad on bread, bulky roll, sub roll, or on a bed of lettuce.

The canning process used today is fundamentally the same that our grandparents and great grandparents used to naturally preserve food generations ago. I don’t know what I’d do without my favorite canned goods! I usually keep the following canned goods in stock: chicken & beef broth, tuna fish, salmon, chicken breast, baked beans, peas, corn, tomato paste, tomato sauce, soup, chili, pumpkin, cranberry sauce and condensed milk.

I have been using canned chicken for several years to make chicken salad and chicken and barley or rice soup. So handy to have. I too like cranberries, grapes, pineapple, or whatever i am in the mood for in my salad.

Yum!!! I tend to get canned chicken breast from Costco and make these types of sandwiches. I also add some curry for an added twist.
