The other day while grocery shopping I happened to spot beautiful blackberries. Blackberries are on of my favorites so of course I bought a few containers! Once I was home and after eating a few, I decided to whip up this delicious Blackberry and Sour Cream Bread. I love quick breads because they come together so quickly, they use pantry ingredients, and they’re done in no time!
Blackberry Sour Cream Bread

Ingredients
- 2 C flour
- 3/4 C sugar
- 1 Tbsp. baking soda
- 1/4 tsp. salt
- 1/2 C butter, melted
- 2 eggs
- 1 C sour cream
- 2 tsp. vanilla
- 6-8 ounces fresh blackberries
Instructions
- Preheat oven to 350 degrees; grease a 9 x 5 inch pan.
- Mix together the flour, sugar, baking soda, and salt; set aside.
- Whisk together the melted butter, eggs, sour cream and vanilla.
- Mix the wet ingredients into the dry, however do not over mix!
- Gently fold in the blackberries.
- Pour into prepared pan.
- Bake for 55-60 minutes; until a toothpick in the center comes out clean. Allow to cool in the pan for 10 minutes, remove and cool completely.
