My family loves pasta, however I don’t so much, but I have to admit this recipe is changing my mind! I love that it’s baked, the flavors meld together perfectly, it’s creamy and quite delicious. This is the perfect meal to assemble ahead of time, toss in the fridge (unbaked) and once you’re home from work all you have to do is bake it in the oven. In about an hour you’ll have a delicious meal for you and your family to enjoy. Now I made this with what my family likes, however you can omit the pepperoni, switch out the beef for sausage, and add in any veggie that you like. This is a very versatile recipe that you can modify to your liking!
Ingredients
- 1 (16 ounce) package pasta
- 1 pound ground beef
- 1 onion, chopped
- 1 (32 ounce) jar spaghetti sauce
- 2 eggs
- 1/2 cup fresh Parmesan cheese, shredded
- 5 tablespoons butter, melted
- 2 cups ricotta cheese, divided
- 4 cups shredded Italian cheese blend, divided
- 2 ounces sliced pepperoni
- Italian parsley, chopped
Instructions
- Preheat oven to 350 degrees; grease a 9x13-inch baking dish.
- Bring a large pot of salted water to a boil.
- Cook pasta in boiling water, stirring occasionally until cooked through but firm to the bite, about 12 minutes; drain.
- Heat a large skillet over medium heat; cook and stir beef and onion until meat is browned and onions are soft and translucent, about 7 minutes; drain off any excess grease.
- Stir the spaghetti sauce into the meat; set aside.
- Whisk eggs, Parmesan cheese, and butter in a large bowl.
- Mix in spaghetti to egg mixture and toss to coat.
- Place this half of the pasta mixture into baking dish.
- Top with half the ricotta cheese, Italian cheese, and meat sauce.
- Place the remaining pasta on top and finish with the other half of the cheeses and sauce.
- Place the pepperoni slices on top.
- Cover with aluminum foil.
- Bake in preheated oven for 40 minutes.
- Remove foil and continue to bake until the cheese is melted and lightly browned, 20 to 25 minutes longer.
- Sprinkle with parsley before serving.
