Baked Fish for a Busy Week

Ingredients:
2# haddock fillet
¼ cups cognac
3 tablespoons mayo
1 teaspoon dried minced onion
2 teaspoon dried chives or parsley
crumb crust ingredients:
Combine:
1½ cups cracker crumbs (I use Late July Organic Saltine crackers or Ritz crackers)
¼ cups melted butter
¼ teaspoon garlic powder
Directions:
Preheat oven to 375°.
Place the haddock fillet in a shallow baking dish and pour the cognac over it. Turn the fillets over to cover the fish completely in the cognac. Using a knife, smear the mayo thinly and evenly over the top of the fish. Cover with the dried minced onion. Sprinkle the crumb crust over the top of the fish. Top with the dried chives.
Bake for 12-15 minutes, depending on the thickness of the fillet.
