With the Super Bowl Game right around the corner, I asked Mary Lagerborg, co-author of Once-A-Month Cooking Family Favorites, if she could share one of her make-ahead appetizers with all of us.
Mary Beth said, “This has been a family favorite of ours for years – for any season. We enjoy them at Super Bowl time, or sitting on the patio in the summer.”
Janet’s Tortilla Roll-Ups
Ingredients
2 8-ounce packages light cream cheese, softened
1 small can diced green chilies
1 small can diced black olives
3 green onions, sliced (discard green tops)
1 small can diced pimentos
2 teaspoons garlic salt
1 package smaller diameter flour tortillas (8-10 inches)
Salsa for dipping
Directions
Mix together the filling ingredients and spread on tortillas. Roll them up, putting a little filling on the edges to help the rolls stick closed. Place the filled tortillas seam-side down in a 9x12x2-inch casserole dish. If you need to make two layers, put a sheet of waxed paper between the layers. Cover with heavy-duty aluminum foil and freeze.
To serve, thaw the roll-ups and slice them. Arrange the slices on a tray with a bowl of your favorite salsa in the center for dipping.
