Early this summer I treated myself to a new panini maker. I thought that it would be an easy and delicious way to fix new kinds of sandwiches on a hot summer day. With no air conditioner in my house, it’s nice to heat up my panini maker instead of my oven! While searching for Panini cookbooks and recipes, I came across Tiffany Collin’s cookbook 200 Best Panini Recipes. This cookbook is filled with a great variety of recipes using common ingredients from your kitchen. The recipes are family-friendly and the photos are amazing! If you’re into sandwiches, I highly recommend it!

So far, I have tried Tiffany’s Clubhouse Chicken Panini. It has grilled chicken breast, choice of ranch dressing or mayo, thin slices of tomato, cooked bacon, and shredded cheddar cheese on sourdough bread. My family and I loved it!
If you don’t have a panini maker, you can use a griddle pan or skillet with something heavy on top.
